Our thanks to nature

The pristine environment that surrounds us has always been the fundamental ingredient of the goodness of our specialties. We are aware of this and we can only be grateful to the splendid nature of the high mountain territory that hosts us, respecting it and committing ourselves to its protection and the conservation of its precious resources.

Respect for resources

Water is a precious element: in our company there is a modern biological purifier that returns it to the environment, after use in the production process, ensuring its purity.

We smoke our specialties with beech wood from our territory, in the face of constant reforestation with as many broad-leaved trees in an area of the valley particularly damaged by the Vaia storm of 2018.

Furthermore, we have “adopted” a path of our beautiful mountains, taking care of it and maintaining it in safety: the suggestive and panoramic route that starts from the Frumeibn fork and allows you to reach the Novarcia stream, among coniferous and secular beech woods, accompanied by crystalline sound of the watercourse.

Energy, a precious asset

Energy saving is first of all a duty towards the planet: we try to do our part by using the latest generation heating / refrigeration systems that allow us to optimize energy consumption by exploiting the resources naturally offered by the microclimate of the valley, both for the cells seasoning for both the establishment. We also recover and reuse the heat developed by refrigeration systems. The use of LED lighting devices contributes to the reduction of electricity consumption.

360° sustainability

For the reduction of pollution, we are concerned with the optimization of transport, thanks to the combination of the use of our own vehicle as a shuttle service and the partnership with an advanced shipping platform. Sustainability is measured even in the smallest details: for this reason, in our tasting area and in the gastronomic events that we carry out throughout the year, we only use bio-compostable materials.
